Gillard Honey's Bee's Knees Cocktail

Posted by Nathan Gillard on

The bee's knees is a refreshing Prohibition-era cocktail that's delightful on spring and summer afternoons. It's a simple mix of gin, lemon juice, and raw honey, and the recipe is very easy to make at home. From a popular phrase used that describes something as excellent, the name is a perfect fit for this delicious and brightly flavoured classic.

With today's variety of gins, the bee's knees is a cocktail with many possibilities. Each gin has its own blend of botanicals that will be accented quite nicely with the lemon and raw honey. You can also try different honeys in this cocktail, as it will sway the drink’s profile hugely.  It's a fun cocktail to play around with and every drink offers a unique experience.

The Bee’s Knees is a sweet, citrus cocktail which lives up to its moniker, and will no doubt leave you buzzing too.

How we make Bee's Knees:

  • 60ml Gin
  • 4 tsp Gillard Raw Honey
  • 22.5ml fresh lemon juice
  • 10ml fresh orange juice

Directions:

Add raw honey, lemon juice and orange juice to a shaker and stir until the raw honey dissolves. Add the gin and top up with ice. SHAKE WELL. Strain into a martini glass. Garnish with a slice of lemon.

Variants:

With light white rum in place of gin, this drink becomes a Honeysuckle, and with Jamaican run, it becomes a Honey Bee!
